With energy in mind, this what I threw together – and can I just say: YUM.

- Handful of arugula
- 1/2 cup of cooked quinoa
- 1/2 an avocado
- A sprinkle of goat cheese crumbles
- salt and pepper to taste
- 1/2 lemon juice, fresh squeeze (please, please, please – NEVER use lemon juice out of a plastic lemon. NEVER.)
